Cappellini Veg Lab - Mariano Comense (CO) - Lombardy
Why we chose them
The Cappellini family, which has been active for years in the wholesale and retail distribution of fresh fruit and vegetables, in 2019 observed a
change in the way vegetables were consumed in shops: the ratio of semi-prepared products, ready to be cooked or regenerated, was growing
significantly. So, like all companies attentive to market needs, they decided to launch a parallel project, led by Francesca and Luca Cappellini: a
vegetable processing laboratory with a line of cleaned, cooked and ready-to-use vegetables, almost exclusively Italian and totally free of
preservatives, a highly innovative production line based on low-temperature vacuum cooking. The company wants to offer the market a product that
combines practicality and quality: a high-quality side dish for shops and a versatile semi-finished product for restaurateurs. The raw materials are
always strictly fresh, carefully selected, almost exclusively of national origin, and processed by hand with great attention to cleaning, cutting and
cooking. The result is a product that retains all its organoleptic, nutritional and taste characteristics, bright colours, intense flavours and a unique
texture. The vegetables are vacuum-packed au naturel and cooked at low temperature, ready to use, to be heated in a bain-marie or microwave.
