Appearance The paste is soft, straw yellow in colour, small-medium eyes; the rind is thin
Taste Sweet with notes of butter and cream, persistent but not intrusive

Curiosity In Malga Verde both Brune and Frisone cows are raised on pasture; the first they produce high quality milk in small quantities, the latter, on the other hand, are distinguished by the quantity of milk produced. Milady told us that this mix is ideal for the production of Malga Verde, which is seasonal and lasts only 4 months
Our selection The selection of Malga Verde is unmistakable: the cheeses produced by Milady Cortese with his father Maurizio and his two brothers are a beautiful expression of alpine pasture production which, in their case, takes place exclusively from June to mid-October, on the Asiago Plateau

Why we chose them
Located at an altitude of 1100 meters above sea level and completely renewed at the beginning of 2000, Malga Verde is a young company still managed by Maurizio Cortese, who founded the business together with his brother Cristiano, and today has been joined by his three sons, Milady, Michele and Davide, who left their respective office works to face this new challenge in the name of tradition. During the summer pasture, from June to mid-October, everyone is involved in the activities: Milady takes care of the store, Michele works in the dairy, Davide takes care of the communication while their father Maurizio continues to follow the breeding. In 2018, a farmhouse was also opened to be able to taste the products of Malga Verde directly on site.
