LASAGNE CON RAGÙ DI MANZO (BEEF RAGÙ) - Eat Like a Star

Ingredients
Traditional baked lasagne made by the chefs of Eat Like a Star using high-quality ingredients: egg pasta base, generous amount of beef ragù with fresh béchamel sauce and Grana Padano DOP cheese. Free from additives or preservatives.

Processing
Ready-made dish packaged in a protective atmosphere following traditional oven cooking. Once reheated, it is comparable to fresh lasagne: well layered and easy to cut, with a beautiful gratin surface. The flavour is balanced and enveloping, with plenty of ragù well balanced by the creaminess of the béchamel sauce, never tasting dry.

Suggestions
Reheat in a microwave oven for 2 minutes 30 seconds at 750 W, or in a conventional oven to allow the developing of the irresistible crust.

For single portions, simply pierce the surface before reheating. For the 3 kg version, divide into portions and reheat the individual servings.

"It's a product we always keep on the menu: we work with the 3 kg tray, from which we get 12 portions. This preparation is quite delicate once opened, so it's important to have adequate rotation. Our customers are very satisfied and tell us that our lasagne reminds them of "grandma's"; it is very important for us to meet customer expectations, but at the same time we appreciate the fixed cost per portion and the significant time savings. We reheat the individual portions in a static oven at 180°C for about 10 minutes: the secret is to heat the lasagne thoroughly, right to the centre, so that the béchamel sauce becomes creamy. We finish with a quick blast in the salamander oven to get a crispy gratin and serve with a drizzle of extra virgin olive oil and a sprinkling of pepper".

Raw materials
Artichokes processed artisanally while still fresh. The raw materials, sourced nationally whenever possible, come exclusively from trusted producers with whom Cappellini has built long-standing relationships.

Processing
The artichokes are carefully trimmed and cut in half, then cooked sous vide at a low temperature. This choice allows all the organoleptic, nutritional and taste characteristics of the vegetable to remain intact, as well as its bright colour, unmistakable artichoke flavour - delicate and appropriately herbaceous - and firm texture with tender flesh. 

Suggestions
The cooking process uses just a drizzle of oil, making the vegetables ideal for any personalisation: suitable for further preparation or just enjoyed as they are, quickly sautéed over high heat, or used as a topping for pizzas and focaccia

The transparent bag is designed for regeneration both in a bain-marie (immerse the bag in boiling water for 4 minutes) and in the microwave (heat for 2 minutes at medium power after piercing the bag).

"When we saw this new product, we immediately recognised its potential: a fresh artichoke that is ready to eat but does not spoil within 24 hours, almost a pantry item.
We use the small format with 8 artichoke halves; we display the bags on a tray at the deli counter so that the artichokes are clearly visible, as they are very appealing to the eye. The price may be an initial obstacle, but it is possible to keep it relatively low considering that there are no costs for raw materials purchasing or processing, and there is no waste.
The advantage of being a ready-made product encourages the customer, and once they have tasted the quality, any doubts disappear. Put a few chopped artichokes on the counter for customers to taste: it is always a good way to introduce new products in your shop."
