Curiosity | In 1994, the Earl, Andrea Czarnocki Lucheschi, and his wife, the Archduchess Isabella of Austria Este, decided to start the production of the 'Dogado di Venezia Vinagro' vinegar, following a very old recipe that was found in the House of Este. Historically, this has been the vinegar mentioned by Cristoforo Messisburgo, author of the most famous practises of the Renaissance cooking. After long years of study, the family has been able to re-establish every single step of this vinegar production. Today 'Dogado di Venezia Vinagro' is produced in the company plant with deep respect to the tradition and a full control on the entire production chain |
Our selection | The firm Czarnocki Lucheschi produces wine vinegars following an ancient tradition and using exclusively grapes from the family vineyards. The producer selected specific old strains of acetic bacterium that has always been used by the family to produce vinegar and which preserve all the aroma and perfumes of the wine during the acetification process. The slow and natural acetification process of the wine is then completed in wooden barrels using the Solera system |
