Appearance The colour is deep brown, but clear and bright
Taste The fragrance is persistent, delicate and slightly acidic with woody overtones. The flavor is bitter-sweet but balanced
Curiosity Balsamic Vinegar of Modena is classified in two categories: Traditional Balsamic Vinegar of Modena or Balsamic Vinegar of Modena. The production of Traditional Balsamic Vinegar is very labour intensive and time consuming: therefore, it is very expensive and available in limited quantities. Balsamic Vinegar of Modena PGI constitutes a more economical alternative to the traditional product
Our selection Balsamic Vinegar of Modena PGI is made from grape must that is partially fermented and/or boiled/ and/or concentrated by adding a quantity of vinegar aged for at least 10 years and with the addition of at least 10% of vinegar produced from the acidification of wine only. Balsamic Vinegar of Modena PGI must follow the customary method of acidification: a slow vinegarization process through natural fermentation, followed by refining, progressive concentration by aging, in high-quality casks made from different types of wood and without the addition of any other spices or flavourings. Only caramel may be added at small levels for color stability. Balsamic Vinegar of Modena PGI must be aged for at least 60 days up to three years. Product aged more than 3 years can be labelled as aged

Why we chose them
BG corresponds to the initials of the two surnames of the family: Bisini and Gambetti. A family that handed down for generations the passion for the production of balsamic vinegar. Nazzarena, who runs today the company with her son Stefano, spent her childhood with her grandparents in a countryside villa around Modena. She spent a lot of hours in the cellar with her grandfather Guido, breathing the smell of must while fermenting in the barrels. At the same time, her grandmother Italia passed to Nazzarena the passion for cooking. At that time Nazzarena used to create original fruit compotes with her granma. Her passion to play with fruit led her to develop, years later, first of all Fragolaceto and then all the other Fruits Preserves: only high quality ingredients, without dyes or preservatives, flavoured with Balsamic Vinegar of Modena PGI by Villa Bisini Gambetti. Nazzarena looks after her products very carefully, with love and respect, from production to sales, like a guardian of the ancient tradition of producing Balsamic Vinegar of Modena.
