Description Whole pasteurized cow's milk cheese with washed rind
Appearance The rind has an orange-pink colour; the paste is creamy immediately under the rind because the maturation takes place from the outside to the inside
Taste Sweet and slightly acidic in the center of the slice and very creamy under the rind, with notes of humid cellar
Maturing At least 7 weeks
Curiosity Taleggio is a cheese of ancient origins, perhaps it dates back to X century; it was born with the need to preserve milk that exceeded family consumption, and once aged in caves or cellars, it was traded or marketed
Suggestions Typical and excellent table cheese, perfect with apples and pears; it is great in first courses preparation and paired with a Moscato wine

Founded in 1960 by Aldo Carozzi, the company is run now by the third generation: Roberto Carozzi with his wife Donata and their three children Vera, Aldo and Marco.
