Description Cheese made with pasteurised sheep's milk from the farm's flock and from four shepherds in Val d'Orcia; it is treated on the surface with tomato sauce and aged for at least 40 days
Appearance The rind, thin but quite hard, is reddish in colour due to the typical treatment with tomato sauce; the paste is ivory white or pale straw-coloured, with small, sparse eyes
Taste Mild and delicate, with hints of butter and pleasant tomato notes in the under-rind
Maturing At least 40 days
Curiosity Treatment with tomato sauce is a traditional Tuscan technique for adding a slightly sour flavour to pecorino cheeses
Our selection The dairy is located in the picturesque hills between Montepulciano and Pienza, surrounded by olive groves, vineyards and pastures. These pastures, renowned for the quality of their grasses, provide natural food for the flocks and give the milk and cheese a delicate and unmistakable flavour
Suggestions Excellent on its own or accompanied by Tuscan bread; also delicious for enriching salads or topping pizzas and focaccia, perfect in savoury pies or stuffed vegetables to add a savoury but balanced touch; try pairing it with a spanish Garnacha wine

Why we chose them
The story of Caseificio Cugusi began in 1962, when Cugusi Raffaele and Maria moved from Sardinia to Tuscany, bringing with them the ancient techniques of cheese-making. Currently the management of the dairy is entrusted to their daughters, Giovanna and Silvana and their husbands, but the rest of the family, other 7 brothers, contributes in various ways: with agriculture, farming and farm management. The dairy is located on the beautiful hills between the Renaissance town of Pienza and Montepulciano, an area of 190 hectares with olive groves, vineyards and pastures. These pastures, famous for the quality of their herbs give to the cheeses of the Cugusi family the unmistakable flavor and quality.
