Description Cow's milk cheese with cooked paste produced in summer alpage; this young version is distinguished by its mildness, with notes of butter and hazelnut, perfect for fondue
Appearance the rind is slightly brown in colour; the straw-yellow paste is compact and completely free of eyes
Taste Mild, refined, with notes of cooked butter, bread crust, hazelnut, and vanilla; mountain flowers and alpine herbs are perceptible
Maturing At least 6 months
Curiosity produced since 1115 in the town of Gruyères, it is still made today according to the traditional recipe: it takes at least 400 litres of milk to produce a 35 kg wheel. It is produced in the cantons of Fribourg, Vaud, Neuchâtel and Jura, in the districts of Courtelary, La Neuveville, Moutier, in some municipalities in the canton of Bern, and in several dairies in German-speaking Switzerland

Gourmino - Langnau - Switzerland

Why we chose them
In 2001, in a rather inaccessible area in the village of Langnau in Switzerland, in the Emme Valley, five dairies founded Gourmino with the intention of joining forces to market their products. The cheeses are produced in small rural dairies that still process local milk using traditional methods, often self-producing the starters needed for the production: an approach that is very different from that of the large industries that dominate the Swiss cheese market. The cheeses are taken to the maturing rooms in Langnau where they are refined. This short supply chain is essential to guarantee the quality of the cheeses and preserve the centuries-old cheese-making tradition of this region of Switzerland.
