Appearance Cylindrical in shape, with a thin, rough rind showing the marks left by the moulds. The cheese is firm and smooth, with an ivory-white colour
Taste Initially sweet, it gives way to subtle notes of smoke and aromatic woods as you savour it
Maturing Not expected
Curiosity Produced and traditionally sold fresh, Ricotta Pecorina di Maiorano is 'dried' on wooden racks in specially designated, well-ventilated rooms and then smoked. This process is carried out exclusively using wood sourced from the farm's olive groves and orange grove

Why we chose them
The Maiorano farm has been breeding sheep since the late 1800s, producing, according to the XV century tradition, mainly Pecorino Canestrato Crotonese. This version of Crotonese Pecorino cheese owes its originality to the use of sheep's milk by Gentile race (one of the most important Italian native sheep breeds) and rennet of kid. From the same milk is also produced an 'excellent smoked ricotta with olive and orange wood from Maiorano farm. The company is in Crotone
