Curiosity Compared to type 0 and 00 industrial flours in one kg of Petra there are fewer parts of starch, more fibers, more vitamins and oily parts of wheat germ; the high gluten content guarantees high dough stability and a high degree of water absorption; in cooking it has an excellent reaction chromatic heat and excellent resistance to high temperatures

Suggestions It is recommended to use Petra 1 with medium hydration (60-90%). Perfect for all types of bread (ciabatta, loaves, loaves) with soft crumb and crunchy, golden crust, characterized by high digestibility. It can also be used for small and large sized desserts, pasta, pizza and on the shovel with long maturation. The excellent sealing characteristics make this flour ideal also in making pre-mixes such as biga or poolish

Why we chose them
