Appearance The rind is elastic and thin, reddish in colour; the paste is compact, white with small, scattered holes
Taste Decisive with pleasant lactic notes and recognisable but balanced goat sensations

Curiosity Thanks to the efforts of the Cavalese Dairy, the ancient tradition of producing goat's milk cheese, which characterised the Val di Fiemme area until the 1970s, has been revived over the last ten years
Suggestions Excellent on its own, melted over polenta or to enrich a gratin dish
