Description A pecorino aged 40 days, produced by Cugusi dairy with pasteurised sheeps milk obtained from property herd and from 4 local shepherds. The rind is red because it is treated with tomato sauce
Appearance The rind is thin and red because of the treatment with tomato sauce. The paste is soft to semi hard and its color is white to ivory. Small eyes are scattered across the paste
Taste The taste is long, buttery and round. The aftertaste is round, slightly acid however dolce due to the butter of the milk
Maturing At least 40 days
Curiosity The treatment with tomato sauce is a traditional tuscan technique for transferring some acid taste to the pecorino cheeses
Our selection The careful attention on the product in every step of the production chain is a key point for Cugusi dairy: no fertilizers are used in the pastures and particular attention is put on the sheeps feeding; the milk has to be always perfectly clean and every step during the processing and the aging is made with passion and precision
Suggestions Perfect in pureness with a slice of tuscan bread (bread produced without salt). We suggest to serve it at room temperature

Why we chose them
The story of Caseificio Cugusi began in 1962, when Cugusi Raffaele and Maria moved from Sardinia to Tuscany, bringing with them the ancient techniques of cheese-making. Currently the management of the dairy is entrusted to their daughters, Giovanna and Silvana and their husbands, but the rest of the family, other 7 brothers, contributes in various ways: with agriculture, farming and farm management. The dairy is located on the beautiful hills between the Renaissance town of Pienza and Montepulciano, an area of 190 hectares with olive groves, vineyards and pastures. These pastures, famous for the quality of their herbs give to the cheeses of the Cugusi family the unmistakable flavor and quality.
