The producer
Caseificio di Predazzo e Moena - Predazzo (TN) - Trentino Alto Adige
Why we chose them
Caseificio di Predazzo e Moena was founded in the early 1990s thanks to the merger of the two old dairies in Moena and Predazzo. It still has 10
member farmers who run their farms in the municipalities of Moena and Predazzo and supply the dairy with around 100 quintals of milk every day,
mainly from Brown Swiss and Red Pied cows. The dairy is part of the Consorzio dei Caseifici Sociali Trentini (Trentino Dairy Consortium), which
works to ensure a production chain that respects the environment, the quality of raw materials and the healthiness of the finished product, in
accordance with a Memorandum of Understanding agreed in the 1980s: a self-regulatory code for livestock and dairy production that regulates the
entire supply chain, from the production of fodder and milk on the farm to the processing of cheese.
