Curiosity | The Tremblaye Farm is located in La Boissière Ecole, on the edge of the Rambouillet forest, in the French region of Ile-de-France. Born as a farm oriented to the production of cereals and with a small stable, in the early 70s it began to select dairy cows for the production of quality milk. Fromagerie de La Tremblaye was born in 1972 with the aim of producing quality farm cheeses. Today the company has 150 Prim'Holstein dairy cows and 600 Alpine goats. The farm produces milk and transforms it every day in the farm dairy; fodder is also produced on the company's 310 acres of land. Suggestions | Ideal paired with citrus fruit or berries, or with bread (the ideal would be the baguette). Try it paired with a beer style Dubbel like Rochefort 6, the animal and cauliflower notes of the cheese are enhanced by the hints of honey and caramel of this beer initially sweet and citrus and slightly bitter in the finish. It is also worth trying the pairing with a Belgian Pale Ale like the Orval rich in vegetable fragrances and light spicy notes (pepper and cinnamon), earthy and finely acid tones. |
