Appearance The rind is thin and its colour is beige. The pasta is compact and grainy, while its colour is ivory white
Taste The taste is sweet, buttery, pleasant, while the aftertaste is long, with hints of forest, rain and herbs
Maturing At least 3 months
Suggestions As a table cheese it asks for medium to full bodied red wines. When grated over pasta it becomes aromatic. Nice over risotto dishes. Excellent companion to dried figs and prunes
