Description Pasta filata cheese produced with whole cow's raw milk; the long ageing gives to the cheese complexity and personality
Appearance Great size cheese with a smooth rind ; the paste is straw coloured, tending to pale pink the more we go from the centre to the rind
Taste The aromas remember notes of milk, nature, hay, flowes, fermented fruits and cellar; the taste is full and intense, tasty and a bit spicy
Maturing At least 24 months
