Description
Produced with geese from Tolosa fed exclusively on grass and corn, bred estensively, only having had vaccinations against infective diseases a few days after birth.
Appearance
Two goose breasts one on top of the other and sewn by hand, very simular to the rolled goose breast but with a working process like that of the speck.
Taste
Sweet, slightly spiced and smoked
Suggestions
Can be preserved at room temperature, very easy to cut because it doesn't need to be kept in the freezer. Very good on hot crusty bread.
