Appearance The wheels are rather heavy with a thin orangy rind, the under rind becomed darker with age. The paste is a light straw yellow with medium sized eyes
Taste Sweet with intense notes of animals and important sensations tied to the washing of the rind and the ageing in environments rich in spontaneous microflore that develop on the rind giving the cheese an aroma of cellar, underwood and moss
Maturing At least 4 months
Curiosity Spretz Tzaorì in the ladino language means 'tasty cheese' and is produced with milk from Bruna and Grigia cows
Our selection Since November 2013, the quality of the raw material, the product's link with the land, the feeding of the cattles and all the production process of the cheese are all set in a mandatory protocol, since Puzzone di Moena got the Protected Designation of Origin (PDO).

Why we chose them
The Dairy of Predazzo and Moena still works in the traditional way. The milk is coming from the rich summer pastures in the area, which extend up to 2000 meters above the sea level. The entire production chain - from cows' feeding to cheese maturation - follows the protocol of the Consortium of Caseifici Sociali Trentini, signed by all the members, including the dairy of Predazzo and Moena. The aim of the Consortium is to produce natural cheeses, with no additives, starting from the quality of milk.
