Description Meatball consisting mainly of goat meat, with the addition of pork lard, flavoured with salt, pepper, garlic, wine and aromatic herbs
Appearance It reminds a meatball; externally it is covered with a yellow conr flour crust
Taste The taste is complex, mitigated by the sweetness of pork lard, with intense aromas of smoke and aromatic herbs
Maturing At least 45 days
Curiosity The legend says that if you find a sheep or a goat in Val Tramontina, you can easily find someone in the area to help you in processing the meat and turn it into a cured charcuterie, the Pitina precisely!
Our selection A typical cured meat from Friuli region also protected by the Slow Food Presidium, produced by La Tana delle Pitine in Val Tramontina, in the province of Pordenone
Suggestions Try it with polenta or a tortilla made with corn flour, delicious also roasted with butter and vinegar. The pairings with beetroot or with small mushrooms (like chiondini) works perfectly. As for the wine we suggest Collio Friulano DOC, Dolcetto d'Alba DOC or Serrapetrona DOC
