Raw material Sheep and pork meatball, very typical of Valtramontina, produced with sheep's meat (70%) and pork's bacon (30%), smoked with beech and juniper wood and then seasoned for 15-20 days
Appearance Meatball coated with maize flour
Taste Pronounced, but mitigated by the sweetness of the bacon; intense flavour of smoke and herbs
Maturing At least 45 days
Curiosity A poor product of peasant origin, it risked disappearing before it was saved by Filippo Bier, helped by Slow Food which gave Pitina the status of Presidium
Our selection Founded in 1875 by great-grandfather Filippo and then managed by grandfather Michele and then again by the father Rolando, the butcher Macelleria Bier tries to hand down the ancient traditions of Tramontina Valley. Located at Cavasso Nuovo (PN), the Bier family manages the whole factory: from slaughter to production and then to selling. The keyword of the family is quality, beginnig from raw materials: the pigs slaughtered come only from stys and breeders located in the Pordenone Valley...
Suggestions Try it cooked just in vinegar and served with polenta. To be tried cut not too thinly and cooked in a frying pan with a bit of butter and a few drops of balsamic vinegar, then served on a very runny polenta . Very good cut into 4 pieces and cooked on the embers for a few minutes and then served with a grilled polenta

It was founded in 1875 by the great-grandfather Philip and then managed first by his grandfather and then by Michele Rolando dad, Philip Bier Butcher now seeks to pass on the ancient traditions of the typical products of the Val Tramontina. Located Poffabro (PN), the Bier family manages the entire supply chain: from slaughter to sausage production up to retail. Quality is the key word of the family order, starting from the raw material: the animals slaughtered originate in fact exclusively of stables and farms of "Pordenone Valleys" .
