Description Cheese produced with raw cow's milk from cows that graze in the mountain summer pastures of Monti Lessini, in the north west of Veneto region
Appearance The rind is thin amber in color, the paste is compact, straw-colored and has an uneven eye
Taste Intense, with strong herbaceous and floral scents
Maturing At least 12 months
Curiosity Cheese of ancient origin, produced since 1200 by a group of German colonists, the Cimbri, in the Monti Lessini area, in the upper Veronese area. The Presìdio brings together the dairies and huts that produce Monte Veronese d'Allevo with mountain milk and is recognizable by the M di malga affixed to focus on the bottom of the shape, next to the DOP mark
Suggestions Like all aged cheeses, the typical Venetian accompaniment is polenta, preferably Biancoperla corn. For a more pairing extravagant, it is suggested to try it with dried cherry tomatoes in oil
