Appearance The rind is wet and covered with some of the fig leaves. The paste is compact and its color is ivory white, without eyes scattered across.
Taste Sweet taste, and distinguished by its intense lactic & herbaceous notes
Curiosity The maturation of pecorino cheeses refined by Vittorio Beltrami takes place in the ancient 'neviere' of Palace Rusticucci in Cartoceto, former Cardinal residence owned by Beltrami family. The 'neviere' are in fact two caves dug in tuff and clay which are accessed by a trap door, once filled with snow to cool the pantry.
