Appearance The rind is wrinkly and its color is gray-brown, with yellow molds spread around; the paste is grainy and its color is white to ivory; it develops a soft underring with the progress of ripening
Taste The taste is dolce, round, with hints of herbs and fruits; the aftertaste is dolce with hints of mushrooms and wooden cellar
Maturing At least 60 days
Curiosity Since the 1985 Pezzata Rossa d'Oropa has been considered as a minor race, registered in the population of cattles groups, indigenous and ethnic, with limited distribution. After a gradual decrease of the population, the numbers have been now in constant levels. These days there are about 5,000 heads in the area, hence the breed is considered not to be in danger of extintion anymore. However, even with those numbers, for FAO the breed is still considered a rare race.
Our selection The Rosso family collects fresh milk from 37 farms from the area where the Pezzata Rossa d'Oropa cattles are bred. Milk is used to produce a wide range of cheeses typical of Biella area.

Why we chose them
Since 1894, Rosa Pidello Rosso has started the production, maturation and trading of cheeses in Sordevolo, the village located in the area of Biella in the Elvo Valley. Today the dairy is managed by Pier Luigi Rosso, Rose's nephew, and his wife Franca along with their sons Henry and Richard. The Rosso family collects fresh milk from 37 farms from the area where the Pezzata Rossa d'Oropa cattles are bred. Milk is used to produce a wide range of cheeses typical of Biella area.
