Raw material Rare cheese, produced only in summer in mountain dairies, with raw semi skimmed milk, from cows of Bruna and Frisona race, pastured in mountain areas
Appearance The rind is smooth and regular, brownish in colour; the paste is straw yellow, with an hard texture and small to medium eyes
Taste During the long ripening this cheese develops an outstanding complexity, initially tasting sweet and gradually growing more pungent, offering hints of toasted hazelnuts, ripe fruit and aromas of freshly mown hay and moss
Maturing At least 19 months
Curiosity Asiago is one of Italy's most common PDO cheeses. The Presidium, however, is dedicated exclusively to the Stravecchio (aged 19 months or more), an extremely rare product made in mountain dairies on the Asiago plateau. Slow Food would like to encourage farmers to mature more wheels for a long time and to let them realise how important small dairies are in protecting montains and ancient traditions
Our selection This Asiago Stravecchio is produced in Malga Verde by Maurizio and Cristiano Cortese family, and have earned many awards as the best Asiago Stravecchio on the Asiago Plateau
Suggestions In the Veneto area the Asiago Stravecchio cheese is eaten with a good polenta made with Biancoperla corn, if possible cooked on a wood fire

Malga Verde - Conco (VI) - Veneto

Why we chose them
Maurizio and Cristiano Cortese run Malga Verde since 2003, that is surrounded by the Asiago Plateau greenery at 1100 meters in altitude. The two brothers were able to transform it into a company quite important the small farm once run by his father, as the numerous awards received in the last 10 years. In June 2006 joined the Consortium for the Asiago cheese protection and they began producing the Asiago DOP · it is a mountain product, an Asiago produced and ripened over 600 meters above sea level. The Asiago Stravecchio DOP make by Cortese family was ranked in first place in two important competitions about raw milk cheeses held on the Asiago Plateau. The Green Hut cheese was ranked in first place in one of the two competitions. The achievements are the result of the passion and the constant desire to improve the Cortese brothers, who were able to test their skills and adding to the farmers' long experience, a positive new experience in the processing of their milk and cheese in the sale of genuine and best quality.
